Cloud Kicks (CK) has organization-wide defaults set to Public Read-Only for Opportunity. One of the
Account Team roles at CK is Executive Sponsor. Account Team members with the Executive
Sponsor role need Read/Write access to all child Opportunities.

Is the requirement asking for this to only apply when someone is added as Executive Sponsor, or should all Account Team members get the access? That might change if it's B or if extra logic is needed.
A doesn’t fit since Account sharing rules don’t control Opportunity access directly. B is the way, because Opportunity sharing rules can target Account Team roles and grant Read/Write across all related Opportunities. Pretty sure that’s what the scenario is after. If I’m missing something about custom filtering, open to other angles.
Its B, since only Opportunity sharing rules can grant direct RW access on Opportunities from the Account Team role in this setup.

Guessing B here. Account sharing rules (A) don't give write access to related Opportunities, which is a common trap on these. Opportunity sharing rules let you target exactly the right users or roles. I think that's what Salesforce wants for this scenario, but open if someone sees it differently.
Don't think A would work since Account sharing rules don't pass down RW access to Opportunities. B makes more sense, but I guess a flow (C) could do it too. Pretty sure B is the standard way though.
